Apple Crumble

(Serves 4)
Ingredients: 11/2 cups chopped fresh apple
1 cup Dhampure demerara sugar
1/2 cup whole wheat flour
1/2 cup quick cooking rolled oats
3/4 tsp cinnamon (dalchini) powder
3/4 tsp nutmeg (jaiphal) powder
2 tbsp butter
1/4 cup chopped almonds, cashew and walnuts

Method:
1) Combine the apple with 1/2 cup of Dhampure demerara sugar and place in a greased ovenproof bowl, approximately 150 mm.(6") in diameter.
2) In another bowl, combine the flour, oats, cinnamon powder, nutmeg powder, butter and the remaining sugar and mix well using your fingertips, till the mixture resembles bread crumbs.
3) Sprinkle the mixture on top of the apple and top with the chopped nuts.
4) Bake in a pre-heated oven at 180 degree C.(360 degree F.) for 25 minutes or till the topping is golden brown.
5) Serve hot with a scoop of ice cream if you like.

Muesli

(Serves 4)
Ingredients: 2 cups cornflakes
1 cup quick rolled cooking oats
4 tbsp wheat bran
1/4 tsp vanilla essence
3 tbsp sultanas (kismis)
2 tbsp Dhampure demerara sugar
For serving
4 cups of warm milk
1 apple (unpeeled), chopped

Method:
1) Combine the oats and wheat bran lightly roast in a non-stick pan over a slow flame for 5 to 7 minutes.
2) Cool completely, add the cornflakes, vanilla essence, sultanas and
Dhampure demerara sugar. Mix well and store in an air-tight container.
3) For serving, place the muesli in individual bowls with the apple and pour warm milk.
Serve immediately.

Irish Coffee

(Serves 2)
Ingredients: 11/2 teaspoons instant coffee powder
1 cup water
1 to 2 tsp Dhampure demerara sugar
2 tbsp whiskey
To Serve
2 tbsp whipped cream

Method:
1) Mix together the coffee powder, water and Dhampure demerara sugar and bring to boil.
2) Pour 1 tablespoon whiskey in an Irish coffee cup and top with 1/2 the coffee mixture.
3) Repeat to make another cup.
Serve immediately topped with the cream. Drink the coffee through the
cream (do not stir after adding the cream.)
